BENTON’S HAMS
We had the pleasure of meeting Allan Benton, owner and skilled smoke-master, of Benton’s Smoky Mountain Country Hams at the Biltmore Estate. While I was dining on one of his prosciutto hams, (and begging for more fat on my pieces), Rick and Allan began discussing the possibilities of a collaboration for smoking our own Mangalitsa bacon, jowls and aging a few hams for prosciutto. We were ecstatic to experience not only Allan’s warmth and engaging manner but his unhesitating generosity to extend us such a valuable and tasty service! So, please stay tuned for our very own Hickory Smoked Bacon and Jowls and in 2022 our own prosciutto! Bravo!
